Garden Egg Sauce

If you are tired of egg sauce, stew or even
green sauce for your yam and boiled plantain.
Change is here you should try this. Its called
GARDEN EGG SAUCE. My people call it (Ife
Ndori which is prepared with ubonu lol if I got
that right, but in the absence of that garden egg
is used)
Ingredients:
Garden eggs
palm oil
Onions
Pepper & Salt (to taste)
smoked mackerels or you can use Sardines
(that's what I use most often)
PREPARATION:
#1. Rinse the garden eggs very well and
remove the stalk.
#2. Boil some water in a pot.
Add the garden eggs and continue to cook till
they are soft.
#3. Blend your garden egg. You can either do
that with a blender or with a mortar and pestle.
#4. Cut the onion into small pieces.
#5. Pound the pepper or anyone you are using
but red pepper is just cool.
#6. Prepare the smoked fish if you have and
separate them into small pieces.
#Pour the palm oil into a clean dry pot and
heat it up. Do not bleach it, you only need to
heat till a piece of onion sizzles when added to
the hot oil.
#When the oil is hot enough, add the onions
and fry for about 2 minutes.
#Add the garden egg puree and stir for a bit.
#Cover the pot and cook-fry for some time and
stir again.
#Repeat till the small amount of
water in the puree dried up.
#Add the pepper then add salt to your taste.
#Add the smoked fish/sardine, stir, and leave
to simmer and it's done!
Use the Garden Egg Sauce to eat Boiled White
Yam (best combo), Boiled Plantains and Agidi/
Eko. If you fried the sauce with vegetable oil,
use for Boiled White Rice and Boiled Potatoes.
